Mum's Pavlova

When it comes to Pavlova's in our family my Mum is the master, I don't even try to make one as no one does it better then her.

Mum made one today and sent me the photo while I was a work. Sadly I won't be getting a piece of this one but I do have her recipe to share with you.


INGREDIENTS

5 x 600g egg whites    
10 heaped tbs of white sugar normal in two lots of 5 tbs
1 tsp of vanilla extract
1 tsp white vinegar
10  good pinch of salt
1 tbs corn flour 

LET'S PUT ALTOGETHER 

1. Beat egg whites and salt together until very stiff, then add the first 5 tbsp of sugar one at a time beating well after each addition.
2. Add 1 tsp of vanilla extract and 1 tsp of white vinegar then beat in the next 5 tsps of sugar for a minute. Ypu should be able to feel bits of sugar in the mixture, stop beating then fold through 1 tbs of cornflour gently.
3. Shape on baking paper and bake in 1 150 degree Celsius oven for 55 minutes. Turn the oven off and leave in there until cooled.

Dress with fresh whipped cream and fruit of choice.

  1. Surely you mean 60 g eggs, not 600g? And 1 pinch of salt, not 10 pinches of salt????

    1. If you look at an egg carton that is how egg sizes are classified. (In Australia). And yes 10 pinches there are approx 20 pinches of salt in a teaspoon
