I like to always use what I have in my pantry and I very rarely buy expensive specific foods to cook or bake with as it all adds up in the end and with my latest quest to streamline the way I grocery shop using staples in different ways suits my family well.
These Chocolate Chickpea cookies are exactly that, made from pantry staples that has turned out to be a super yummy extra nutrient packed cookie.
INGREDIENTS
400gm Chickpeas canned, drained and rinsed
1/2 Cup Cocoa
1/4 Cup Peanut Butter
1/4 Cup Raw Sugar
1 Tsp Vanilla Essence
1 Tsp Baking Powder
1/2 Cup Quick Oats
LET'S PUT IT ALTOGETHER
1. Place all ingredients into a food processor with the metal blade and process on night until the mixture is smooth and comes together to form a ball.
2. Take tablespoon sized ball amounts and roll in your hands. Placed on a lined baking tray. Continue until all mixture is used.
Flatted with lightly wet fingers and sprinkle with "sprinkles" if you like.
Bake in a 180 degree Celsius oven for 10 minutes. Cool an enjoy.
Store in an airtight container for up to a week.

ReplyDeleteI've been looking for alternatives via Google and almost all use peanut butter. From memory in the health food isle of the supermarket there is a peanut butter substitute. Butter is a similar sub as you are using the peanut butter to help bind the ingredients together and keep them well formed. Hope that helps.
ReplyDeleteI made these today and they were great. But, I had to add about 1/3 cup of water as the mixture was almost totally dry. I can't help but wonder if a liquid ingredient was omitted from the recipe?
ReplyDeleteMine were heaps darker in colour and I followed the recipe exactly. Id say the ones in the pic don't have nearly that much cocoa in them?
